Carrie Lee's Lean Mean Bison Burgers
2 lbs of ground Bison
1 pack baby portobello mushrooms, chopped fine.
4 or 5 large "riced" raw red potatoes (finely grated)
4 tomatoes, diced
1/2 cup wheat germ
1 or two green bell peppers- diced
2 tbs ground black pepper
1 tsp ( more or less) of ground cayenne pepper
( I do not use salt- but you can salt to taste
7 springs of fresh oregano - leaves only
( 1 tbs fresh)
preheat oven to 325.
mix all ingredients thoroughly.
form into small burger patties
Place in large glass pan slightly oiled ( pam or olive oil is fine)
bake on 325 until done- watch carefully because the bison is lean.
Serve on toasted whole wheat english muffins spread with dijon mustard and fresh lentil sprouts.
